Cranberry Cinnamon Granola Bars
These chewy, gooey cranberry cinnamon granola bars are so tasty, you’re going to need to make another batch as soon as they’re gone.
When I think of snacks, one of the things I think of is granola bars. They are so quick and easy to eat on the go.
There are tons of store bought granola bars on the market that are delicious, but in my opinion, I haven’t found one as good as these.
Plus, just knowing that you made these from scratch and know every ingredient that went into them can give you a peace of mind.
Goodness, these gooey granola bars are so addicting. I wanted to eat the whole batch when I tried them for the first time. They make a great addition to your breakfast, as well as a perfect midday snack with a boost of carbohydrates and energy.
So, how easy are these to make? These take hardly any time to come together, and only take an hour to set in the fridge.
Here’s how to make them. Pour the wet ingredients into the dry ingredients, press into a glass baking dish, and put them in the fridge. That’s it! Super simple.
These are the perfect snack to prep ahead of time. Take just 10 minutes of time on Sundays to make ahead, and then have them to enjoy for the whole week (well maybe, they may be gone by mid week)!
Feel free to add in hemp hearts, chia seeds, or flax seeds for an extra boost of nutrition. I just decided to keep them pretty simple this time around.
The cranberries and pumpkin seeds in this recipe can be swapped out for a different dried fruit and nut or seed. The flavor opportunities are endless!
Also, if you don’t have coconut oil on hand, you can substitute vegetable oil in the place of coconut oil.
Cranberry Cinnamon Granola Bars

INGREDIENTS
2 cups rolled old fashioned oats
1/2 cup dried cranberries
1/3 cup pumpkin seeds
2 tsp cinnamon
1/4 tsp salt
1/2 cup peanut butter
1/3 cup honey
1/4 cup coconut oil
INSTRUCTIONS
Combine the dry ingredients first: mix together the oats, cranberries, pumpkin seeds, cinnamon, and salt.
In a glass bowl or measuring cup, add in the oil and the peanut butter and microwave for 20-30 seconds, so it’s easier to mix them into the dry ingredients.
Add the melted peanut butter and coconut oil into the dry ingredients, then add the honey and mix everything together.
Press the mix into a glass baking dish and chill in the fridge for an hour.
Remove from the fridge and cut the mix into granola bar shapes. (I like to sprinkle a little extra cinnamon on the tops of mine). Enjoy!

Storage: These will last up to a week in the fridge stored in an airtight container. Or if you want to have them ready for on the go, store them individually in snack bags.
You can store these in an airtight container in the pantry as well, they just might be a little bit more crumbly to eat.
